MEAL PLAN WITH RECIPE LINKS – 12/24 – 12/30/22
You can hear the audio version of this meal plan on my podcast at Lola’s Frugal Life Podcast, on Apple Podcast, and on many other platforms!
Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope this can help you with some ideas of what you might want to make this week.
- Saturday – 12/24/22
- I don’t normally include breakfast recipes, but I wanted to share what we will be making for Christmas Eve breakfast. We will be having Bacon and Egg Breakfast Tarts.
- We will be going to a potluck tonight and I will be bringing Slow Cooker Salisbury Steak.
- Sunday -12/25/22
- Today is Christmas. So far, this is what we have on the menu:
- Christmas Ham
- Spicy Sweet Potato Casserole
- Best Green Bean Casserole
- Classic Baked Macaroni and Cheese
- Creamy Cheesy Spinach – in crockpot place 2 pks frozen chopped spinach, 16 ounces small curd cottage cheese, 1/4 cup sliced butter, 1/2 pound american cheese, 3 eggs beaten, 1/4 cup flour, 1/8 tsp salt. Cook on low 4 to 5 hours.
- Corn Casserole III
- Chef John’s Perfect Mashed Potatoes
- Today is Christmas. So far, this is what we have on the menu:
- Monday – 12/26/22
- Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil it to your desired doneness. I’m not making any sides because I figure we will have plenty left over from Christmas.
- Tuesday – 12/27/22
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly.
- Wednesday – 12/28/22
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. We will also have some frozen vegetables with this meal.
- Thursday – 12/29/22
- Today I will be making Crockpot Chili. This will take some prep time in the morning, but I am off of work this week so I will have some extra time.
- Friday – 12/30/22
- Tonight will be a one-dish meal! I will be making Debbie’s Vegetable Lasagna. You could definitely serve this meal with a side dish, but I feel like it already has everything in the lasagne. It’s got pasta, cheese, and veggies! So, I’m keeping it simple and serving this all on its own!
