Meal Plan with Recipe Links – 05/22 – 05/28/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday – 05/22/21
- Tonight we will be having turkey meatloaf for dinner. The recipe that my kids grew up on is the JENNIE-O’S Best Ever Meatloaf. So, that is what I usually make. For side dishes, we will be having boxed shells and cheese and a can of corn!
- Sunday – 05/23/21
- A few weeks ago I picked up a package of the Aidelles chicken meatballs because I had a coupon for them. It was a double package and I have one of the packages left that needs to be used up. So, tonight I will be using those chicken meatballs up. We will serve them with spaghetti and a quick homemade sauce. Often, I will use a jarred sauce, but for this meal, I will be making the Best Marinara Sauce Yet. It’s a simple quick homemade sauce that we really like for our pasta.
- Monday – 05/24/21
- Tonight will be hamburger night. This is part of my regular meal rotation. We do hamburgers pretty much every other Monday. For my pescatarian daughter, I will be making some impossible burgers. I usually rotate those, with some homemade black bean veggie burgers. I will be serving this with a can of pork and bean and some Classic Macaroni Salad.
- Tuesday – 05/25/21
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Chipotle Black Bean Chili for my one daughter who does not eat chicken. For a side dish, I will be making a bagged salad from the grocery store.
- Wednesday – 05/26/21
- We usually rotate some type of seafood on Wednesdays. This week we are having shrimp. I use the frozen shrimp that comes in a large bag from BJs. I get the kind with just the tails on, so it’s not a lot of prep work to get them ready to cook. With the shrimp, I will be making Shrimp Scampi Bake. When the shrimp is done, I toss it with some cooked spaghetti to make a nice shrimp pasta meal. The shrimp dish cooks really quickly, so I usually get the water going for the past before I put the shrimp in the oven.
- Thursday – 05/27/21
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
- Friday – 05/28/21
- Tonight I will be making Baked Chicken Nuggets. I love making this because it comes together so quickly! For a side dish, I will be making Air Fryer Roasted Cauliflower. The recipe actually calls for both cauliflower and broccoli. But, I don’t use both, I alternate which one I use each time I make the recipe. I will also be making boxed rice as another side dish. What I mean by that is one that is sold as a side dish and usually comes with a little seasoning packet.
