MEAL PLAN WITH RECIPE LINKS – 06/05 – 06/11/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 06/05/21
    • Tonight we will be having pork chops for dinner. One of my favorite pork chop recipes is Oven “Fried” Breaded Pork Chops. The pork chops are breaded with a mixture of panko breadcrumbs and crushed corn flakes. I really like that combo for the breading on these. One of our sides with this meal will be Hellmann’s Potato Salad. I will also be making Air-Fryer Asparagus Fries. If I am short on time, I will just toss the asparagus spears with some olive oil and seasoning and just cook them up like that in the air fryer!
  • Sunday – 06/06/21
    • In sticking with my recent theme of easy meals on Sunday, tonight we will be having French Dip Sandwiches. I don’t have a link for this recipe. However, all you have to do is put all of the following ingredients into your crockpot and cook on low all day: 3 pounds chuck roast, 1 envelope onion soup mix, 1 packet au jus gravy mix, and 1 14-ounce can of beef broth. When it’s done, serve with some rolls and swiss or provolone cheese! As a side dish, I will also be making some Pennsylvania Dutch Corn Pie. With the corn pie recipe, I have never actually included the hard-boiled eggs that it calls for. It still comes out great!
  • Monday – 06/07/21
    • Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Black Bean Veggie Burgers. I will be serving this with a can of pork and beans and roasted potatoes in the air fryer. I don’t have a recipe for the potatoes. In the winter I do use a recipe for potatoes baked in the oven. However, since it’s getting hotter out, I am going to cook them up in the air fryer. I will just slice them up, toss them with some olive oil, and salt and pepper, and air fryer under they are tender. Some potatoes take longer to cook them others, so I just keep checking on them!
  • Tuesday – 06/08/21
    • Every Tuesday, we do some type of Mexican theme meal. Tonight we will be trying out a new recipe that I expect will be added to our regular rotation. I will be making Sheet Pan Shrimp Fajitas which is very similar to the sheet pan chicken fajitas that I often make. I’m looking forward to trying this out!
  • Wednesday – 06/09/21
    • We usually rotate some type of seafood on Wednesdays. However, this week I made a little bit of a mistake in my meal plan. When I planned to add the shrimp fajitas in for our Tuesday Mexican theme meal, I did not notice that I had planned to have shrimp for our seafood night the next day! But, it’s fine, we will be having shrimp two days in a row this week. I could have made a last-minute switch, but I decided to just go with it! Tonight we will be having Bacon Wrapped Barbeque Shrimp. I have mentioned previously that I do not actually wrap the shrimp when I make this recipe. Instead, I cut up the back in pieces and lay over the shrimp on the baking sheet. As a side dish, I will be making some Fried Rice in the instant pot.
  • Thursday – 06/10/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I don’t want to spend a lot of time cooking. Tonight we will be having breakfast for dinner. In the crockpot, I will be making Slow Cooker Cheesy Bacon Ranch Potatoes. I love doing these potatoes because they will be ready at dinner time and all I need to do is cook up some scrambled eggs and Turkey Bacon in the Oven.
  • Friday – 06/11/21
    • Tonight I will be making some Oven-Baked Chicken. This is one of my favorite ways to bake chicken. I also refer to this as Bisquick chicken, because you basically just dredge the chicken in Bisquick and bake in a dish with butter. The recipe calls for a cut-up whole chicken. I have always made this with just one type of chicken, either drumsticks or bone-in thighs. I will be serving the chicken with some Instant Pot Mac and Cheese which is so super quick and easy! We will also be having some air fryer Carrot Fries with this meal.
