MEAL PLAN WITH RECIPE LINKS – 06/12 – 06/18/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday – 06/12/21
- Tonight we will be having pork chops for dinner, but this time on the grill! I will be making Grilled Brown Sugar Pork Chops. These do require the preparation of the sauce on the stovetop before putting the pork chops on the grill. But, it’s pretty quick and easy to make. One of our sides with this meal will be Hellmann’s Potato Salad. Yes, we just did potato salad last week too! But, this is one of my daughter’s favorite sides for the summer. I will also be making Mexican Corn on the Cob, which is also made on the grill.
- Sunday – 06/13/21
- I’ve been trying to stick with crockpot-type meals on Sundays. But, today I am going to do something a little bit different. It seems like it will still be pretty simple to make, so hopefully, I am right! I am going to be making Pasta with Escarole, White Beans, and Chicken Sausage. Since one of my kids doesn’t eat meat, I will be making the chicken sausage on the side and whoever would like to have some can add it to their dish!
- Monday – 06/14/21
- Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving a bagged salad with this. I am also going to serve this with some canned vegetarian chili.
- Tuesday – 06/15/21
- Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Taco Tuesday! I don’t have a recipe the share for the tacos, but I can tell you how I serve them. For the meat, I cook up some ground turkey and season it with seasoned salt and chili powder. Then I serve with hard taco shells, soft taco shells, shredded cheddar, avocados, sour cream, and taco sauce. As an alternative filling for my daughter that does not eat meat, I will be making Instant Pot Lentil Taco filling.
- Wednesday – 06/16/21
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. We will also have some frozen vegetables on the side. I always keep some on hand that can be quickly made in the microwave.
- Thursday – 06/17/21
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I don’t want to spend a lot of time cooking. Tonight we will be a soup night and we are having Instant Pot Tuscan White Bean and Lentil Soup. If you have an instant pot, this is a really simple soup to make and it’s one of my favorites. I will be serving this with grilled cheese sandwiches.
- Friday – 06/18/21
- For tonight I will be making pulled pork in the crock-pot. I don’t have a recipe link to share for this one, but it’s really easy to make. Just buy a pouch of the pulled pork slow cooker sauce at the grocery store and pour it over a three-pound pork roast. Let it cook all day on low, and that’s it! As a side dish, I will be also be making Cheesy Squash Casserole.
