MEAL PLAN WITH RECIPE LINKS – 06/19 – 06/25/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday – 06/19/21
- Tonight will be a one-dish meal! I will be making Debbie’s Vegetable Lasagna. You could definitely serve this meal with a side dish, but I feel like it already has everything in the lasagne. It’s got pasta, cheese, and veggies! So, I’m keeping it simple and serving this all on its own!
- Sunday – 06/20/21
- We will be having a simple meal of Baked Chicken Nuggets tonight. If I have time to do some prep and cut up the chicken earlier in the day, that will make the meal come together very quickly. As a side dish, I will be making Easy Rice Bake Casserole. This takes 45 minutes to bake int the oven, so I will bake this first and then cover it while he chicken nuggets cook. Hopefully it’s not hot out today with all of this oven cooking! I will also make a side dish of frozen vegetables. I usually always keep some on hand, so I’ll just pick one from what I have!
- Monday – 06/22/21
- Tonight we will be having hamburgers for dinner. I make these every other week. This is one of those that I don’t have a real recipe to share with you. I just make them very simply by making patties with ground beef. Sometimes I’ll throw a little bit of McCormick hamburger seasoning on them. For my one daughter that does not eat meat, I will be making some Impossible Burgers. I will also be making a can of pork and beans, and Oven Fresh Seasoned Potato Wedges.
- Tuesday – 06/15/21
- Tonight is Chipotle night. This is one of the meals we rotate for our Mexican theme Tuesday night meals. We make homemade Chipotle-style bowls. Everyone makes their own how they like it! I take some chicken breast and slice it up into bite-size pieces. Then I toss it with a little olive oil, seasoned salt, and chili powder. I then broil the chicken for about 15 – 20 minutes to get it a little crispy. I serve the chicken with some brown rice, shredded cheddar, black beans, salsa, avocado, sour cream, etc. To make it really quick, I use instant brown rice that I cook in the microwave while the chicken is cooking. Just put out whatever you might like to add to your bowl. It’s such a quick easy meal!
- Wednesday – 06/23/21
- Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. I will be trying out Sesame Noodles tonight as a side dish. This will be the first time I am making this recipe. I think it will go well with the flounder. I will be using another quick-frozen vegetable side dish to go with this meal.
- Thursday – 06/24/21
- My family will be eating out tonight because my middle daughter will be graduating from High School. We will be eating out! So, no meal plan to share with you for this evening!
- Friday – 06/25/21
- For tonight I will be making turkey meatloaf. The recipe I have been making since my kids were little is the JENNIE-Os Best Ever Meatloaf. As a side dish, I will be making one of my quick go-to favorites, which is 5-Ingredient Instant Pot Mac and Cheese. I will also be making Crispy Air Fried Sweet Potato Wedges.
