MEAL PLAN WITH RECIPE LINKS – 06/26 – 07/02/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 06/26/21
  • Sunday – 06/27/21
    • Today we will be keeping it easy with a crockpot meal with a quick oven-baked dish at dinner time. In the crockpot, I will be making Sausage and Peppers for a Dozen. When it comes time for dinner I will quickly throw together an Easy Ravioli Bake to complete the meal!
  • Tuesday – 06/29/21
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Chipotle Black Bean Chili for my one daughter who does not eat chicken.
  • Wednesday – 06/30/21
    • Wednesday is seafood night most weeks. This week we are having Shrimp Scampi Bake. When the shrimp is done, I toss it with some cooked spaghetti to make a nice shrimp pasta meal. The shrimp dish cooks really quickly, so I usually get the water going for the past before I put the shrimp in the oven.
  • Thursday – 07/01/21
    • We try to keep things really simple on Thursdays because this is the night that I go grocery shopping! Tonight we will be doing Instant Pot Split Pea Soup. If you like split pea soup and have never made it in the instant pot before, try it! It cooks so quickly. We will be serving this with grilled cheese sandwiches.
  • Friday – 07/02/21
    • Tonight we will be cooking out on the grill! I will be making Brats and Grilled Chicken Thighs. I buy the boneless chicken thighs and just brush them with barbeque sauce before grilling. For side dishes, we will be having Rainbow Rotini Salad and a can of corn.
