Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope this can help you with some ideas of what you might want to make this week.

  • Saturday – 05/25/24
    • Tonight will we will be cooking on the grill. I will be making Cuban Style Pork Chops. This is one of my favorite pork chop recipes to make on the grill in the summer. They take a little bit more prep time, so I don’t make them too often. For a side, I will be making Hellmann’s Potato Salad.
  • Sunday – 05/26/24
    • For dinner tonight we will be having Cheesy Crispy Chicken. I don’t have a recipe link for this one. To make it, you dip chicken in milk and bread with crushed Ritz crackers. Place in a greased baking dish and top with shredded cheddar. Cover with foil and bake at 400 for 35 minutes. For a side, we will be having some Mexican White Rice.
  • Tuesday – 05/28/24
    • Tonight is Chipotle night. This is one of the meals we rotate for our Mexican theme Tuesday night meals. We make homemade Chipotle-style bowls. Everyone makes their own how they like it! I take some chicken breast and slice it up into bite-size pieces. Then I toss it with a little olive oil, seasoned salt, and chili powder. I then broil the chicken for about 15 – 20 minutes to get it a little crispy. I serve the chicken with brown rice, shredded cheddar, black beans, salsa, avocado, sour cream, etc. To make it really quick, I use instant brown rice that I cook in the microwave while the chicken is cooking. Just put out whatever you might like to add to your bowl. It’s such a quick easy meal!
  • Wednesday – 05/29/24
    • We usually rotate some type of seafood on Wednesdays. Tonight we will be having Bacon Wrapped Barbeque Shrimp. I have mentioned previously that I do not actually wrap the shrimp when I make this recipe. Instead, I cut up the bacon into pieces and lay over the shrimp on the baking sheet. I will be serving this with Easy Fried Rice.
