MEAL PLAN WITH RECIPE LINKS – 07/10 – 07/16/21

In this episode, I will share with you my meal plan for the week. Hopefully, it can help you out with your meal planning and give you some ideas for some recipes

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 07/10/21
    • Today I don’t have a recipe to share because we are going to a high school graduation party for my daughter’s friend. So, I won’t be cooking tonight!
  • Sunday – 07/11/21
    • Today I will be making Creamy Herbed Pork Chops. This is one of my favorite ways to make pork chops. Honestly, I have never made the “creamy part” of the recipe. I am sure it is good! But, I just love the pork chops seasoned with the Montreal Steak seasoning and browned in the butter. It comes out so good. I use bone-in pork chops. One of our side dishes will be Spicy Sweet Potato Casserole. This isn’t something I would normally make in the summer, it’s more of a holiday dish for me. But, I thought it would be something different and I have some sweet potatoes that need to be used up! I will also be making Air-Fryer Asparagus Fries.
  • Monday – 07/12/21
    • Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving a bagged salad with this. I am also going to serve this with some canned vegetarian chili.
  • Tuesday – 07/13/21
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Chicken Chimichangas with Sour Cream Sauce. I have never actually made the sauce that goes along with this recipe, I just short-cut it and serve sour cream on the side. We will also put out some salsa and avocado. I will also be making a bagged salad from the grocery store as a side dish.
  • Wednesday – 07/14/21
    • We usually rotate some type of seafood on Wednesdays. Tonight we will be having Bacon Wrapped Barbeque Shrimp. I have mentioned previously that I do not actually wrap the shrimp when I make this recipe. Instead, I cut up the back in pieces and lay over the shrimp on the baking sheet. As a side dish, I will be making some Hellmann’s Original Potato Salad. I will also be making some fresh green beans in the air fryer. I just toss them with some olive oil and salt and cook them up!
  • Thursday – 07/15/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Slow Cooker Corn Chowder with grilled cheese sandwiches. I especially love having a slow cooker soup on this night so that when I get home from food shopping, dinner is basically done (because the grilled cheese sandwiches that still need to be made are so quick!).
  • Friday – 07/15/21
    • Tonight I will be making one of my favorite pork chop recipes which is Oven “Fried” Breaded Pork Chops. The pork chops are breaded with a mixture of panko breadcrumbs and crushed corn flakes. I really like that combo for the breading on these. For a side dish, I will be making Easy Rice Bake Casserole.
