Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 07/31/21
    • Today we will be making grilled chicken, which I like to marinate in some olive oil and white vinegar with Montreal Chicken Season. Then I just throw it on the grill. It cooks up so quickly! As a side I will be making Five Ingredient Simple Green Pasta Salad. This is the first time I will be trying this recipe. Looks like it will be good!
  • Sunday – 08/01/21
    • We are having pulled pork in the crockpot today. This is such an easy meal for a Sunday! I don’t have a recipe for the pulled pork because I am just using one of those slow cooker sauce pouches. So, you just pull the meat in the crockpot, dump the sauce on it, and let it cook all day. As a side dish I will be making Pennsylvania Dutch Corn Pie.
  • Monday – 08/02/21
    • Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Black Bean Veggie Burgers. I will be serving this with a can of pork and beans and Easy Oven-Roasted Potatoes. If the weather is too hot, I may end up just throwing the potatoes into the air fryer!
  • Tuesday – 08/03/21
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Chipotle Black Bean Chili for my one daughter who does not eat chicken.
  • Wednesday – 08/04/21
    • Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For side dishes I will be cooking up a box of flavored rice (the box that comes with the little seasoning packet), and some Air Fryer Roased Cauliflower and Broccoli. I usually choose one or the other, not both because it’s too much for my family. So, this week, we are doing cauliflower.
  • Thursday – 08/05/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
  • Friday – 08/06/21
    • Tonight we I will be making one of my favorite baked chicken recipes. I will be making Oven-Baked Chicken. I usually make this with bone-in chicken thighs, but it comes out great with legs too! For sides I will be making 5-Ingredient Instant Pot Mac and Cheese and some frozen vegetables. I always keep some of the steam-fresh type vegetables on hand to pop in the microwave.
