MEAL PLAN WITH RECIPE LINKS – 08/07 – 08/13/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday – 08/07/21
- Today I will be making Creamy Herbed Pork Chops. This is one of my favorite ways to make pork chops. Honestly, I have never made the “creamy part” of the recipe. I am sure it is good! But, I just love the pork chops seasoned with the Montreal Steak seasoning and browned in the butter. It comes out so good. I use bone-in pork chops. For sides I will be making Mexican Corn on the Cob and Pasta with Tomatoes, Basil and Garlic. For the corn on the cob, I have started cooking it in the air fryer in stead of the grill. It’s easier and tastes great!
- Sunday – 08/08/21
- Tonight I will be making some Baked Ham and Cheese Party Sandwiches. These are cute little sandwiches and they come out so good. Great for a quick meal. I don’t make them often. As a side I will be serving Classic Macaroni Salad.
- Monday – 08/09/21
- Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving this with some canned vegetarian chili.
- Tuesday – 08/10/21
- Every Tuesday, we do some type of Mexican theme meal. Tonight we will be making Sheet Pan Shrimp Fajitas! These are super quick and easy to make. I will be serving a bagged salad on the side (the kind you get at the grocery store that includes the toppings!)
- Wednesday – 08/11/21
- Wednesdays are usually seafood nights. Tonight we will be having Crab Cakes. This isn’t a recipe in our usual meal rotation, but I decided to throw it in for something different. On the side I will be making a bag of a frozen vegetable mix I have that includes roasted potatoes and green beens.
- Thursday – 08/12/21
- We try to keep things really simple on Thursdays because this is the night that I go grocery shopping! Tonight we will be doing Instant Pot Split Pea Soup. If you like split pea soup and have never made it in the instant pot before, try it! It cooks so quickly. We will be serving this with grilled cheese sandwiches.
- Friday – 08/13/21
- We will be having a simple meal of Baked Chicken Nuggets tonight. If I have time to do some prep and cut up the chicken earlier in the day, that will make the meal come together very quickly. As a side dish, I will be making some baked potatoes in the microwave. I will also make a side dish of frozen vegetables. I usually always keep some on hand, so I’ll just pick one from what I have!
