MEAL PLAN WITH RECIPE LINKS – 01/15 – 01/21/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -01/15/22
- Tonight we will be making Parmesan Crusted Pork Chops. I will be serving these with Quick Veggie Pasta.
- Sunday – 01/16/22
- Today we will be keeping it easy with a crockpot meal with a quick oven-baked dish at dinner time. In the crockpot, I will be making Sausage and Peppers for a Dozen. When it comes time for dinner I will quickly throw together some baked ziti to complete the meal!
- Monday – 01/17/22
- Tonight we will be having hamburgers for dinner. I make these every other week. This is one of those that I don’t have a real recipe to share with you. I just make them very simply by making patties with ground beef. Sometimes I’ll throw a little bit of McCormick hamburger seasoning on them. For my one daughter that does not eat meat, I will be making some Impossible Burgers. I will also be making a can of pork and beans, and Oven Fresh Seasoned Potato Wedges.
- Tuesday – 01/18/22
- Every Tuesday, we do some type of Mexican theme meal. Tonight we will be making Sheet Pan Shrimp Fajitas! These are really simple to make and taste great!
- Wednesday – 01/19/22
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. I will also be serving with some frozen vegetables on the side (whatever I have on hand).
- Thursday – 01/20/22
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
- Friday – 01/21/22
- Tonight we I will be making one of my favorite baked chicken recipes. I will be making Oven-Baked Chicken. I usually make this with bone-in chicken thighs, but it comes out great with legs too! For a side dish I will be making Cheesy Instant Pot Rice and Vegetables.
