MEAL PLAN WITH RECIPE LINKS – 01/29 – 02/04/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -01/29/22
- Tonight we will be making Slow Cooker Salisbury Steak. This is such a comfort food! I will also be making Vegetarian Tater Tot Casserole as a side dish!
- Sunday – 01/30/22
- Today we will be having Air Fryer Whole Chicken! This comes out very similar to the rotissery style chickens that you can purchase at the grocery store. As a side I am making Easy Lo Mein, which is a nice pasta and veggie dish!
- Monday – 01/31/22
- Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Black Bean Veggie Burgers. I will be serving this with a can of pork and beans and Oven Fresh Seasoned Potato Wedges.
- Tuesday – 02/01/22
- Tonight is Chipotle night. This is one of the meals we rotate for our Mexican theme Tuesday night meals. We make homemade Chipotle-style bowls. Everyone makes their own how they like it! I take some chicken breast and slice it up into bite-size pieces. Then I toss it with a little olive oil, seasoned salt, and chili powder. I then broil the chicken for about 15 – 20 minutes to get it a little crispy. I serve the chicken with some brown rice, shredded cheddar, black beans, salsa, avocado, sour cream, etc. To make it really quick, I use instant brown rice that I cook in the microwave while the chicken is cooking. Just put out whatever you might like to add to your bowl. It’s such a quick easy meal!
- Wednesday – 02/02/22
- Wednesday is seafood night most weeks. This week we are having Shrimp Scampi Bake. When the shrimp is done, I toss it with some cooked spaghetti to make a nice shrimp pasta meal. The shrimp dish cooks really quickly, so I usually get the water going for the past before I put the shrimp in the oven.
- Thursday – 02/03/22
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Paste e Fagioli and grilled cheese!
- Friday – 02/04/22
- Tonight we will be having Mushroom Pork Chops. This is a simple stove top dish that cooks up quickly in a frying pan. For side dishes I will be making Chef John’s Perfect Mashed Potatoes and Carrot Fries.
