MEAL PLAN WITH RECIPE LINKS – 03/05 – 03/11/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -03/05/22
- For tonight I will be making Eggplant Parm. This recipe involves frying the eggplant and then baking. I have tried strictly baking, but it never comes out right to me! I will be serving this with Portobella Penne Pasta Casserole.
- Sunday – 03/06/22
- Today I will be making some Asparagus and Mozzerella Stuffed Chicken Breast. For a side dish, I will be making Chef John’s Perfect Mashed Potatoes and some frozen microwavable vegetables.
- Monday – 03/07/22
- Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil to your desired doneness. As a side dish, I will be making Cauliflower Au Gratin.
- Tuesday – 03/08/22
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Chicken Chimichangas with Sour Cream Sauce. I have never actually made the sauce that goes along with this recipe, I just short-cut it and serve sour cream on the side. We will also put out some salsa and avocado. I will also be making a bagged salad from the grocery store as a side dish!
- Wednesday – 03/09/22
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. I will also be serving with some frozen vegetables on the side (whatever I have on hand).
- Thursday – 03/10/22
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Crock Pot Potato Soup and grilled cheese. For the Crock Pot Potato Soup, I just put into the crockpot: 1 32 ounce bag of potatoes, peppers, and onions, 1 can of cream of mushroom soup, and 32 ounces of vegetable broth. Then I just let it cook all day on low. We eat it just as it is, but if you would like it creamier, you can add 8 ounces of cream cheese at the end. When dinner time comes, I just have to cook up some grilled cheese sandwiches, and dinner is done!
- Friday – 03/11/22
- Tonight we will be having Mushroom Pork Chops. This is a simple stove top dish that cooks up quickly in a frying pan. For a side dish I will be making Vegetarian Tater Tot Casserole.
