MEAL PLAN WITH RECIPE LINKS – 06/11 – 06/17/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -06/11/22
- Tonight we will be cooking out on the grill! I will be making Brats and Grilled Chicken. I buy the boneless chicken breast and marinate them with McCormick chicken seasoning with white vinegar and olive oil before grilling. The brats I will actually cook in the air fryer instead of the grill. As a side dish, I will be making Tomato Mozzarella Pasta Salad.
- Sunday – 06/12/22
- Tonight we will be having One Pot Creamy Pesto Chicken Pasta. This is a great simple meal to make.
- Monday – 06/13/22
- Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, and green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving this with some canned vegetarian chili.
- Tuesday – 06/14/22
- Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to have Green Chile Chicken and Potatoes.
- Wednesday – 06/15/22
- Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For a side dish, I will be making Cheesy Instant Pot Rice and Vegetables.
- Thursday – 06/16/22
- Thursday we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I don’t want to spend a lot of time cooking. Tonight we will be a soup night and we are having Instant Pot Summer Soup. I will be serving this with grilled cheese sandwiches.
- Friday – 06/17/22
- Tonight I am making Penne with Broiled Chicken. This one is just something I made up one day and everyone really liked it. I just cut up some chicken breast into bite-size pieces. Toss the chicken with a little bit of olive oil and garlic salt. Then I broil it until just a little bit crispy. In the meantime, I boil up some penne pasta. I then toss the penne pasta with a little bit of olive oil and mix in some shredded mozzarella. I serve the chicken on the side for those who want to add it. One of my children doesn’t eat chicken, otherwise, I would just mix it all together. I will be serving it with a side of frozen vegetables.
