Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday -01/01/22
    • This Saturday is New Year’s Day, and also my mother’s birthday. So, we will be ordering in for dinner instead of cooking today!
  • Monday – 01/03/22
    • Tonight we will be having hamburgers for dinner. I make these every other week. This is one of those that I don’t have a real recipe to share with you. I just make them very simply by making patties with ground beef. Sometimes I’ll throw a little bit of McCormick hamburger seasoning on them. For my one daughter that does not eat meat, I will be making some Impossible Burgers. I will also be making a can of pork and beans, and Oven Fresh Seasoned Potato Wedges.
  • Tuesday – 01/04/22
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Chicken Chimichangas with Sour Cream Sauce. I have never actually made the sauce that goes along with this recipe, I just short-cut it and serve sour cream on the side. We will also put out some salsa and avocado. I will also be making a bagged salad from the grocery store as a side dish!
  • Wednesday – 01/05/22
    • Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For side dishes I will be making mushroom rice and some frozen vegetables. I always keep some of the microwave steam-fresh type on hand.
  • Thursday – 01/06/22
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Six Can Chicken Tortilla. This soup comes together quickly and goes great with grilled cheese sandwhiches!
