MEAL PLAN WITH RECIPE LINKS – 01/08 – 01/14/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -01/08/22
- Today I decided I am going to make lasagna! The recipe I will be making is for the World’s Best Lasagna. This does have meat in it, which one of my daughters won’t eat. So, I am also going to be making Vegetarian Stuffed Peppers. I made these once before, and they were really good!
- Sunday – 01/09/22
- Sunday nights have I have been trying to stick with easy meals! Tonight we will be having French Dip Sandwiches. I don’t have a link for this recipe. However, all you have to do is put all of the following ingredients into your crockpot and cook on low all day: 3 pounds chuck roast, 1 envelope onion soup mix, 1 packet au jus gravy mix, and 1 14-ounce can of beef broth. When it’s done, serve with some rolls and swiss or provolone cheese! As a side dish, I will also be making a Broccoli Cheese Casserole.
- Monday – 01/10/22
- Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil to your desired doneness. As a side dishs, I will be making Parmesan Herbed Noodles and Air Fryer Brussel Sprouts.
- Tuesday – 01/11/22
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Quinoa and Blank Beans my one daughter who does not eat chicken, and also as a side for the rest of us.
- Wednesday – 01/12/22
- We usually rotate some type of seafood on Wednesdays. Tonight we will be having Bacon Wrapped Barbeque Shrimp. I have mentioned previously that I do not actually wrap the shrimp when I make this recipe. Instead, I cut up the back in pieces and lay over the shrimp on the baking sheet. As a side dish, I will be making some vegetable fried rice. I don’t have recipe link for this one. I will just be stir frying up some frozen stir fry vegetables, then adding some cooked white rice and soy sauce for flavor!
- Thursday – 01/13/22
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I don’t want to spend a lot of time cooking. Tonight we will be a soup night and we are having Instant Pot Tuscan White Bean and Lentil Soup. If you have an instant pot, this is a really simple soup to make and it’s one of my favorites. I will be serving this with grilled cheese sandwiches.
- Friday – 01/14/22
- For tonight I will be making turkey meatloaf. The recipe I have been making since my kids were little is the JENNIE-Os Best Ever Meatloaf. For side dishes, I will be making 5-Ingredient Instant Pot Mac and Cheese and some frozen vegetables.
