Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Monday – 01/24/22
    • Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving this with some canned vegetarian pork and beans and a bagged salad.
  • Tuesday – 01/25/22
    • Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Taco Tuesday! I don’t have a recipe the share for the tacos, but I can tell you how I serve them. For the meat, I cook up some ground turkey and season it with seasoned salt and chili powder. Then I serve with hard taco shells, soft taco shells, shredded cheddar, avocados, sour cream, and taco sauce. As an alternative filling for my daughter that does not eat meat, I will be heating up some canned refried beans.
  • Wednesday – 01/26/22
    • Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For side dishes I will be making Crispy Air Fried Potato Wedges and some frozen vegetables. I always keep some of the microwave steam-fresh type on hand.
  • Thursday – 01/27/22
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Crock Pot Potato Soup and grilled cheese. For the Crock Pot Potato Soup, I just put into the crockpot: 1 32 ounce bag of potatoes, peppers, and onions, 1 can of cream of mushroom soup, and 32 ounces of vegetable broth. Then I just let it cook all day on low. We eat it just as it is, but if you would like it creamier, you can add 8 ounces of cream cheese at the end. When dinner time comes, I just have to cook up some grilled cheese sandwiches, and dinner is done!
  • Friday – 01/28/22
    • Tonight I am making Penne with Broiled Chicken. This one is just something I made up one day and everyone really liked it. I just cut up some chicken breast into bite size pieces. Toss the chicken with a little bit of olive oil, and garlic salt. Then I broil it until just a little bit crispy. In the meantime, I boil up some penne pasta. I then toss the penne pasta with a little bit of olive oil and mix in some shredded mozzarella. I serve the chicken on the side for those who want to add it. One of my children doesn’t eat chicken, otherwise I would just mix it all together. I will be serving with a side of frozen vegetables.
