MEAL PLAN WITH RECIPE LINKS – 02/19 – 02/25/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -02/19/22
- For tonight I will be using the slow cooker. I will make making Pork Chops for the Slow Cooker. As a side, I will be trying out a new recipe called Steakhouse Potatoes Romanoff. I will also be serving with Air Fryer Roasted Cauliflower and Broccoli.
- Sunday – 02/20/22
- Today I will be making some quick and easy Baked Chicken Nuggets. For a side dish, I will be making Pennsylvania Dutch Corn Pie.
- Monday – 02/21/22
- Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving this with some canned vegetarian pork and beans and a bagged salad.
- Tuesday – 02/22/22
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Quinoa and Blank Beans my one daughter who does not eat chicken, and also as a side for the rest of us.
- Wednesday – 02/23/22
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. I will also be serving with some frozen vegetables on the side (whatever I have on hand).
- Thursday – 02/24/22
- We try to keep things really simple on Thursdays because this is the night that I go grocery shopping! Tonight we will be doing Instant Pot Split Pea Soup. If you like split pea soup and have never made it in the instant pot before, try it! It cooks so quickly. We will be serving this with grilled cheese sandwiches.
- Friday – 02/25/22
- Today I will be making Creamy Herbed Pork Chops. This is one of my favorite ways to make pork chops. Honestly, I have never made the “creamy part” of the recipe. I am sure it is good! But, I just love the pork chops seasoned with the Montreal Steak seasoning and browned in the butter. It comes out so good. I use bone-in pork chops. For a side dish, I will be making Quick Veggie Pasta.
