MEAL PLAN WITH RECIPE LINKS – 02/26 – 03/04/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -02/26/22
- For tonight I will be making Chef John’s Italian Meatballs. There are pretty easy to make and bake in the oven. I will be serving them with Baked Ziti.
- Sunday – 02/27/22
- Today I will be making some Baked Teriyaki Chicken. This recipe does have a longer cooking time. So, just make sure you have some time to spare. For a side dish, I will be making Cheesy Instant Pot Rice and Vegetables.
- Monday – 02/28/22
- Tonight we will be having hamburgers for dinner. I make these every other week. This is one of those that I don’t have a real recipe to share with you. I just make them very simply by making patties with ground beef. Sometimes I’ll throw a little bit of McCormick hamburger seasoning on them. For my one daughter that does not eat meat, I will be making some Impossible Burgers. I will also be making a can of pork and beans, and Oven Fresh Seasoned Potato Wedges.
- Tuesday – 03/01/22
- Tonight is Chipotle night. This is one of the meals we rotate for our Mexican theme Tuesday night meals. We make homemade Chipotle-style bowls. Everyone makes their own how they like it! I take some chicken breast and slice it up into bite-size pieces. Then I toss it with a little olive oil, seasoned salt, and chili powder. I then broil the chicken for about 15 – 20 minutes to get it a little crispy. I serve the chicken with some brown rice, shredded cheddar, black beans, salsa, avocado, sour cream, etc. To make it really quick, I use instant brown rice that I cook in the microwave while the chicken is cooking. Just put out whatever you might like to add to your bowl. It’s such a quick easy meal!
- Wednesday – 03/02/22
- Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For a side dishes I will be making Instant Pot Mac and Cheese and some canned lima beans.
- Thursday – 03/03/22
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Slow Cooker Sausage, Spinach and White Bean Soup and grilled cheese. When dinner time comes, I just have to cook up some grilled cheese sandwiches, and dinner is done!
- Friday – 03/04/22
- Tonight I am making Penne with Broiled Chicken. This one is just something I made up one day and everyone really liked it. I just cut up some chicken breast into bite size pieces. Toss the chicken with a little bit of olive oil, and garlic salt. Then I broil it until just a little bit crispy. In the meantime, I boil up some penne pasta. I then toss the penne pasta with a little bit of olive oil and mix in some shredded mozzarella. I serve the chicken on the side for those who want to add it. One of my children doesn’t eat chicken, otherwise I would just mix it all together. I will be serving with a side of frozen vegetables.
