Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Sunday – 03/20/22
    • I don’t normally share breakfast recipes, but today we will be using our leftover corned beef to make Chef John’s Corned Beef Hash and eggs.
    • For dinner tonight we will be having Cheesy Crispy Chicken. I don’t have a recipe link for this one. To make it, you dip chicken in milk and bread with crushed ritz crackers. Place in a greased baking dish and top with shredded cheddar. Cover with foil and bake at 400 for 35 minutes. For sides, we will be having Mushroom Rice and some canned corn.
  • Monday – 03/21/22
    • Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving this with some canned vegetarian pork and beans.
  • Tuesday – 03/22/22
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Quinoa and Blank Beans my one daughter who does not eat chicken, and also as a side for the rest of us.
  • Wednesday – 03/23/22
    • We usually rotate some type of seafood on Wednesdays. Tonight we will be having Bacon Wrapped Barbeque Shrimp. I have mentioned previously that I do not actually wrap the shrimp when I make this recipe. Instead, I cut up the back in pieces and lay over the shrimp on the baking sheet. I will be serving with Easy Lo Mein.
  • Thursday – 03/24/22
    • Thursday we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
  • Friday – 03/25/22
    • Tonight we will be making one of my favorite baked chicken recipes. I will be making Oven-Baked Chicken. I usually make this with bone-in chicken thighs, but it comes out great with legs too! For a side dish I will be making One-Pot Penne alla Vodka.
