MEAL PLAN WITH RECIPE LINKS – 05/07 – 05/13/22

meal plan with recipes

You can hear the audio version of this meal plan on my podcast at Lola’s Frugal Life Podcast, on Apple Podcast, and many other platforms!

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

    • I totally forgot that today was Mother’s Day when I created this weeks meal plan. So, I will not actually be cooking today! But, I wanted to share what was on the original plan in case anyone was looking for one of the recipes. I had planned on making grilled chicken Mexican Bean Salad and Classic Macaroni Salad.
  • Tuesday – 05/10/22
    • Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Taco Tuesday! I don’t have a recipe the share for the tacos, but I can tell you how I serve them. For the meat, I cook up some ground turkey and season it with seasoned salt and chili powder. Then I serve with hard taco shells, soft taco shells, shredded cheddar, avocados, sour cream, and taco sauce. As an alternative filling for my daughter that does not eat meat, I will be heating up some canned refried beans.

    • We try to keep things really simple on Thursdays because this is the night that I go grocery shopping! Tonight we will be doing Instant Pot Split Pea Soup. If you like split pea soup and have never made it in the instant pot before, try it! It cooks so quickly. We will be serving this with grilled cheese sandwiches.
  • Friday – 05/13/22
    • Tonight I am making Penne with Broiled Chicken. This one is just something I made up one day and everyone really liked it. I just cut up some chicken breast into bite-size pieces. Toss the chicken with a little bit of olive oil and garlic salt. Then I broil it until just a little bit crispy. In the meantime, I boil up some penne pasta. I then toss the penne pasta with a little bit of olive oil and mix in some shredded mozzarella. I serve the chicken on the side for those who want to add it. One of my children doesn’t eat chicken, otherwise, I would just mix it all together. I will be serving it with a side of frozen vegetables.
