MEAL PLAN WITH RECIPE LINKS – 05/21 – 05/27/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -05/21/22
- Tonight I will be doing a simple crockpot meal using frozen pre-made meatballs. I will be making Anna’s Amazing Easy Pleasy Meatballs over Buttered Noodles.
- Sunday – 05/22/22
- Today I will be making some quick and easy Baked Chicken Nuggets. For a side dish, I will be making Peas & Pasta.
- Monday – 05/23/22
- Tonight will be hamburger night which I do every other Monday. For my daughter that doesn’t eat regular hamburgers, I will be making some Best-Ever Turkey Burgers. I will be serving this with a can of pork and beans and Oven Fresh Seasoned Potato Wedges.
- Tuesday – 05/24/22
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Chicken Chimichangas with Sour Cream Sauce. I have never actually made the sauce that goes along with this recipe, I just short-cut it and serve sour cream on the side. We will also put out some salsa and avocado. I will also be making a bagged salad from the grocery store as a side dish!
- Wednesday – 05/25/22
- Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For a side dish, I will be making Broccoli-Pasta Side Dish.
- Thursday – 05/26/22
- Thursday we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Crock Pot Potato Soup and grilled cheese. For the Crock Pot Potato Soup, I just put into the crockpot: 1 32-ounce bag of potatoes, peppers, and onions, 1 can of cream of mushroom soup, and 32 ounces of vegetable broth. Then I just let it cook all day on low. We eat it just as it is, but if you would like it creamier, you can add 8 ounces of cream cheese at the end. When dinner time comes, I just have to cook up some grilled cheese sandwiches, and dinner is done!
- Friday – 05/27/22
- We are having pulled chicken in the crockpot today. This is such an easy meal for a Sunday! I don’t have a recipe for the pulled chicken because I am just using one of those slow cooker sauce pouches (for pulled pork, but using boneless chicken thighs). So, you just put the meat in the crockpot, dump the sauce on it, and let it cook all day. As a side, I will be making a Caprese Salad.
