MEAL PLAN WITH RECIPE LINKS – 07/02 – 07/08/22
You can hear the audio version of this meal plan on my podcast at Lola’s Frugal Life Podcast, on Apple Podcast, and on many other platforms!
Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -07/02/22
- Tonight we will be having fried chicken cutlets. I just slice the chicken thin, dip in egg and breadcrumb, and fry it up in a frying pan. As a side, I will be making Five Ingredient Simple Green Pasta Salad.
- Sunday – 07/03/22
- Tonight will we will be cooking on the grill. I will be making Cuban Style Pork Chops. This is one of my favorite pork chop recipes to make on the grill in the summer. They take a little bit more prep time, so I don’t make them too often. For a side, I will be making Baked Parmesan Zucchini.
- Monday – 07/04/22
- Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil to your desired doneness. As a side dish, I will be making Rainbow Rotini Salad.
- Tuesday – 07/05/22
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Authentic Mexican Picadillo.
- Wednesday – 07/06/22
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. We will also have some frozen vegetables with this meal.
- Thursday – 07/07/22
- We try to keep things really simple on Thursdays because this is the night that I go grocery shopping! Tonight we will be doing Instant Pot Split Pea Soup. If you like split pea soup and have never made it in the instant pot before, try it! It cooks so quickly. We will be serving this with grilled cheese sandwiches.
- Friday – 07/08/22
- Tonight I will be making one of my favorite pork chop recipes which is Oven “Fried” Breaded Pork Chops. The pork chops are breaded with a mixture of panko breadcrumbs and crushed corn flakes. I really like that combo for the breading on these. For a side dish, I will be making Arancini Balls and some frozen vegetables.
