Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 07/17/21
    • Today we will be making grilled chicken, which I like to marinate in some olive oil and white vinegar with Montreal Chicken Season. For sides, we will be having Mexican Bean Salad and Classic Macaroni Salad.
  • Sunday – 07/18/21
    • Sunday nights have I have been trying to stick with easy meals! Tonight we will be having French Dip Sandwiches. I don’t have a link for this recipe. However, all you have to do is put all of the following ingredients into your crockpot and cook on low all day: 3 pounds chuck roast, 1 envelope onion soup mix, 1 packet au jus gravy mix, and 1 14-ounce can of beef broth. When it’s done, serve with some rolls and swiss or provolone cheese! As a side dish, I will also be making some Vegetarian Tater Tot Casserole.
  • Monday – 07/19/21
    • Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Impossible Burgers. I will be serving this with a can of pork and beans and Oven Fresh Seasoned Potato Wedges.
  • Tuesday – 07/20/21
    • Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Taco Tuesday! I don’t have a recipe the share for the tacos, but I can tell you how I serve them. For the meat, I cook up some ground turkey and season it with seasoned salt and chili powder. Then I serve with hard taco shells, soft taco shells, shredded cheddar, avocados, sour cream, and taco sauce. As an alternative filling for my daughter that does not eat meat, I will be making Instant Pot Lentil Taco filling.
  • Wednesday – 07/21/21
    • On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. We will aslo be having some Carrot Fries in the air fryer.
  • Thursday – 07/22/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Six Can Chicken Tortilla Soup with grilled cheese sandwiches. I especially love having a slow cooker soup on this night so that when I get home from food shopping, dinner is basically done (because the grilled cheese sandwiches that still need to be made are so quick!).
  • Friday – 07/23/21
    • Tonight we will be cooking out on the grill! I will be making Brats and Grilled Chicken Thighs. I buy the boneless chicken thighs and just brush them with barbeque sauce before grilling. For side dishes, we will be having Rainbow Rotini Salad and a can of corn.
