MEAL PLAN WITH RECIPE LINKS – 07/24 – 07/30/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday – 07/24/21
- Tonight will we will be cooking on the grill. I will be making Cuban Style Pork Chops. This is one of my favorite pork chop recipes to make on the grill in the summer. They take a little bit more prep time, so I don’t make them too often. For sides, I will be making two of our other summer favorites. We will be having Hellmann’s Orignal Potato Salad and Mexican Corn on the Cob.
- Sunday – 07/25/21
- Today we will be keeping it easy with a crockpot meal with a quick oven-baked dish at dinner time. In the crockpot, I will be making Sausage and Peppers for a Dozen. When it comes time for dinner I will quickly throw together an Easy Ravioli Bake to complete the meal!
- Monday – 07/26/21
- Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil to your desired doneness. For a side dishe, we will be trying something new tonight. I will be making Pasta with Tomatoes, Basil and Garlic.
- Tuesday – 07/27/21
- Tonight is Chipotle night. This is one of the meals we rotate for our Mexican theme Tuesday night meals. We make homemade Chipotle-style bowls. Everyone makes their own how they like it! I take some chicken breast and slice it up into bite-size pieces. Then I toss it with a little olive oil, seasoned salt, and chili powder. I then broil the chicken for about 15 – 20 minutes to get it a little crispy. I serve the chicken with some brown rice, shredded cheddar, black beans, salsa, avocado, sour cream, etc. To make it really quick, I use instant brown rice that I cook in the microwave while the chicken is cooking. Just put out whatever you might like to add to your bowl. It’s such a quick easy meal!
- Wednesday – 07/28/21
- On Wednesdays we usually do seafood. Tonight we will be trying out a new shrimp recipe. I will be making Garlic Parmesan Baked Shrimp. For side dishes I will be cooking up some baked potatoes in the microwave and making a bag of some frozen vegetables.
- Thursday – 07/29/21
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having Spinach Tortellini Soup with grilled cheese sandwiches.
- Friday – 07/30/21
- Tonight we I will be cooking up some Porcupines! These are little meatballs with rice in them. I don’t recall how I found this receipes, because prior to finding it, I had never heard of these! My one tip here is to use minute rice, because I have sometimes had trouble with regular which rice cooking enough when the meatballs bake in the over. As a side dish I will be making Perfect Mashed Potatoes and a can of corn.
