MEAL PLAN WITH RECIPE LINKS - 08/14 - 08/20/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 08/14/21
    • Today I will be making Sausage, Pepper and Onion sandwiches. I will be cooking the sausage in the air fryer. First I will chop up some peppers and onions, toss with olive oil and either cook up in a frying pan or in the air fryer at 400 degrees until they are tender. To cook the sausage I will be using the method described in this recipe for Quick and Easy Air Fryer Sausage. The sandwiches can be served on hot dog buns, or rolls. For side dishes, I will be making Light and Easy Greek Potato Salad and Mexican Bean Salad.
  • Monday – 08/16/21
    • Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Impossible Burgers. I will be serving this with a can of pork and beans and Oven Fresh Seasoned Potato Wedges.
  • Tuesday – 08/17/21
    • Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Taco Tuesday! I don’t have a recipe the share for the tacos, but I can tell you how I serve them. For the meat, I cook up some ground turkey and season it with seasoned salt and chili powder. Then I serve with hard taco shells, soft taco shells, shredded cheddar, avocados, sour cream, and taco sauce. As an alternative filling for my daughter that does not eat meat, I will be heating up some canned refried beans.
  • Wednesday – 08/18/21
    • Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For side dishes I will be cooking up some boxed shells and cheese and whatever frozen vegetables I happen to have on hand. I always keep some of the microwaveable steam fresh type of vegetables in the freezer.
  • Thursday – 08/19/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I don’t want to spend a lot of time cooking. Tonight we will be a soup night and we are having Instant Pot Tuscan White Bean and Lentil Soup. If you have an instant pot, this is a really simple soup to make and it’s one of my favorites. I will be serving this with grilled cheese sandwiches.
  • Friday – 08/20/21
    • Tonight we will be cooking out on the grill! I will be making Brats and Grilled Chicken Thighs. I buy the boneless chicken thighs and just brush them with barbeque sauce before grilling. The brats I will actually cook in the air fryer instead of the grill. As a side dish I will be making Vegetarian Tater Tot Casserole.
