MEAL PLAN WITH RECIPE LINKS – 09/25 – 10/01/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday – 09/25/21
    • Tonight we will be making Parmesan Crusted Pork Chops. I will be serving the these with some baked potatoes and what frozen vegetables that I have on hand!
  • Sunday – 09/26/21
    • We will have having some BBQ Country Style Ribs tonight. These take a while to cook in the oven, so plan to cook early if you will be making these. I will be serving the ribs with Easy Rice Bake Casserole and some frozen vegetables.
  • Monday – 09/27/21
    • Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Black Bean Veggie Burgers. I will be serving this with a can of pork and beans and Easy Oven-Roasted Potatoes. If the weather is too hot, I may end up just throwing the potatoes into the air fryer!
  • Tuesday – 09/28/21
    • Tonight is Chipotle night. This is one of the meals we rotate for our Mexican theme Tuesday night meals. We make homemade Chipotle-style bowls. Everyone makes their own how they like it! I take some chicken breast and slice it up into bite-size pieces. Then I toss it with a little olive oil, seasoned salt, and chili powder. I then broil the chicken for about 15 – 20 minutes to get it a little crispy. I serve the chicken with some brown rice, shredded cheddar, black beans, salsa, avocado, sour cream, etc. To make it really quick, I use instant brown rice that I cook in the microwave while the chicken is cooking. Just put out whatever you might like to add to your bowl. It’s such a quick easy meal!
  • Wednesday – 09/29/21
    • Wednesdays are usually seafood nights. Tonight I will be making Better Than Fried Shrimp. As a side dish, I will be making some vegetable fried rice. I don’t have a recipe to share for the fried rice. I will basically fry up some cooked white rice, stir-fry vegetables and some soy sauce to make a simple fried rice.
  • Thursday – 09/30/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I don’t want to spend a lot of time cooking. Tonight we will be a soup night and we are having Slow Cooker Chicken Taco Soup. If you have an instant pot, this is a really simple soup to make and it’s one of my favorites. I will be serving this with grilled cheese sandwiches.
  • Friday – 10/01/21
    • Tonight we I will be cooking up some Porcupines! These are little meatballs with rice in them. I don’t recall how I found this receipes, because prior to finding it, I had never heard of these! My one tip here is to use minute rice, because I have sometimes had trouble with regular which rice cooking enough when the meatballs bake in the over. As a side dish I will be making Perfect Mashed Potatoes and a can of corn.
