MEAL PLAN WITH RECIPE LINKS – 10/02 – 10/08/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Monday – 10/04/21
    • Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use the potatoes to make Italian Hot Dogs. I am also serving this with some canned vegetarian pork and beans.
  • Tuesday – 10/05/21
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Chipotle Black Bean Chili for my one daughter who does not eat chicken.
  • Wednesday – 10/06/21
    • On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use the individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil.
  • Thursday – 10/07/21
    • No recipe on the meal plan tonight! We will be eating dinner out for my daughter’s birthday! If you need an idea, we usually do breakfast for dinner, or soup and grilled cheese on Thursdays!
  • Friday – 10/08/21
    • Today I will be making Creamy Herbed Pork Chops. This is one of my favorite ways to make pork chops. Honestly, I have never made the “creamy part” of the recipe. I am sure it is good! But, I just love the pork chops seasoned with the Montreal Steak seasoning and browned in the butter. It comes out so good. I use bone-in pork chops. For a side dish, I will be making Easy Rice Bake Casserole.
