Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.

  • Saturday -10/16/21
    • Tonight we will be making Bow Ties with Sausage, Tomatoes and Cream. I don’t usually make sides with this, it’s enough as a meal all on it’s own. But, you could definitely serve with a salad.
  • Monday – 10/18/21
    • Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil to your desired doneness. As a side dish, I will be making Vegetarian Tater Tot Casserole and some frozen vegetables.
  • Tuesday – 10/19/21
    • Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Chicken Chimichangas with Sour Cream Sauce. I have never actually made the sauce that goes along with this recipe, I just short-cut it and serve sour cream on the side. We will also put out some salsa and avocado. I will also be making a bagged salad from the grocery store as a side dish.
  • Wednesday – 10/20/21
    • Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For side dishes I will be making a box of a store bought flavored rice mix and Roasted Rainbow Vegetables in the Air Fryer.
  • Thursday – 10/21/21
    • Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
  • Friday – 10/22/21
    • Tonight I am making Penne with Broiled Chicken. This one is just something I made up one day and everyone really liked it. I just cut up some chicken breast into bite size pieces. Toss the chicken with a little bit of olive oil, and garlic salt. Then I broil it until just a little bit crispy. In the meantime, I boil up some penne pasta. I then toss the penne pasta with a little bit of olive oil and mix in some shredded mozzarella. I serve the chicken on the side for those who want to add it. One of my children doesn’t eat chicken, otherwise I would just mix it all together. I will be serving with a side of frozen vegetables.
