Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope this can help you with some ideas of what you might want to make this week.

  • Saturday – 10/21/23
    • For dinner tonight we will be having Cheesy Crispy Chicken. I don’t have a recipe link for this one. To make it, you dip chicken in milk and bread with crushed Ritz crackers. Place in a greased baking dish and top with shredded cheddar. Cover with foil and bake at 400 for 35 minutes. For sides, we will be having some Rice Pilaf and frozen vegetables.
  • Sunday – 10/22/23
  • Monday – 10/23/23
    • Tonight I will be making Quick Baked Chicken Parmesan. As the name states, it’s a quick chicken parmesan recipe with no frying. You just bread the chicken breast, bake it, then add the sauce and cheese and bake a little longer. It’s a pretty simple recipe. I will be serving spaghetti with jarred sauce as a side dish. You could also make chicken parmesan sandwiches with this!
  • Tuesday – 10/24/23
    • Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Cheesy Chicken Nachos!
  • Wednesday – 10/25/23
    • Wednesday is seafood night most weeks. This week we are having Easy Shrimp Scampi. When the shrimp is done, I serve it with some cooked linguine to make a nice shrimp pasta meal.
  • Thursday – 10/26/23
    • Thursday we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
  • Friday – 10/27/23
    • Tonight we will be going out to dinner to celebrate a family birthday, so no meal to share for tonight!
