MEAL PLAN WITH RECIPE LINKS – 12/04 – 12/10/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -12/04/21
- Tonight we will be making My Chili with Bowtie Primavera as a side dish. This is an unusal combination, but one of my children does not eat chili!
- Sunday – 12/05/21
- Today I will not be cooking dinner, so no meal on the plan for today. I will be attending a family event!
- Monday – 12/06/21
- Tonight will be hamburger night which I do every other Monday. For my pescatarian daughter, I will be making some Black Bean Veggie Burgers. I will be serving this with a can of pork and beans and Easy Oven-Roasted Potatoes. If the weather is too hot, I may end up just throwing the potatoes into the air fryer!
- Tuesday – 12/07/21
- Every Tuesday, we do some type of Mexican theme. For tonight, I will be making Sheet Pan Chicken Fajitas. I serve this up with some flour tortillas and sour cream. This is a recipe I like making because it comes together so quickly. I will also be making Quinoa and Blank Beans my one daughter who does not eat chicken, and also as a side for the rest of us.
- Wednesday – 12/08/21
- Wednesdays are usually seafood nights. Tonight we will be having fried flounder. I don’t have a recipe for the flounder. To make it, I just dip the flounder in egg and breadcrumbs and then fry them up. For side dishes I will be making mushroom rice and some frozen vegetables. I always keep some of the microwave steam-fresh type on hand.
- Thursday – 12/09/21
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
- Friday – 12/10/21
- Tonight I will be making Italian Chicken Roll Ups. I will be serving with a side of Cheesy Instant Pot Rice and Vegetables.
