MEAL PLAN WITH RECIPE LINKS – 12/10 – 12/16/22

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope this can help you with some ideas of what you might want to make this week.
- Saturday – 12/10/22
- For tonight I will be making turkey meatloaf. The recipe I have been making since my kids were little is the JENNIE-Os Best Ever Meatloaf. For side dishes, I will be making Easy Stovetop Mac and Cheese and Air Fryer Roasted Broccoli.
- Sunday – 12/11/22
- Tonight we will be making Parmesan Crusted Pork Chops. I will be serving these with some Creamy Spinach and Mushroom Tortelli with Carmelized Onions.
- Monday – 12/12/22
- Hot dogs are on the menu tonight! We do this once a month. I also make some Home Fried Potatoes in the air fryer. I just chop up some potatoes, onion, and green peppers. Then toss them in a bowl with a little olive oil, salt, and pepper and throw them in the air fryer on 360 for about 20 – 30 minutes. Some potatoes seem to cook quicker and some are longer, so I just check them along the way and see how much more time they need. You can also roast them in the oven if you don’t have an air fryer. We use potatoes to make Italian Hot Dogs. I am also serving this with some canned chili.
- Tuesday – 12/13/22
- Every Tuesday, we do some type of Mexican theme meal. Tonight we are going to do Cheesy Chicken Nachos!
- Wednesday – 12/14/22
- On Wednesdays we usually do seafood. Tonight we will be having salmon, which has become a regular in our rotation now that I found this really easy way to cook it that comes out delicious! I use individually frozen pieces of salmon from BJs. Then I brush them with olive oil and sprinkle some McCormick Smokehouse Maple seasoning on them. Then bake at 450 for 10 to 12 minutes. I will be serving some egg noodles tossed with butter and olive oil. We will also have some frozen vegetables with this meal.
- Thursday – 12/15/22
- Thursday we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
- Friday – 12/16/22
- Tonight I will be making a really easy crockpot meal which is great for a Sunday! We will be having Slow Cooker Chicken Stroganoff. I will also make some frozen vegetables to go on the size.
