MEAL PLAN WITH RECIPE LINKS – 12/18 – 12/24/21

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope that this can help you with some ideas of what you might want to make this week.
- Saturday -12/18/21
- Tonight we I will be cooking up some Porcupines! These are little meatballs with rice in them. I don’t recall how I found this receipes, because prior to finding it, I had never heard of these! My one tip here is to use minute rice, because I have sometimes had trouble with regular which rice cooking enough when the meatballs bake in the over. As a side dish I will be making Perfect Mashed Potatoes and some frozen vegetables.
- Sunday – 12/19/21
- Tonight will be a one-dish meal! I will be making Debbie’s Vegetable Lasagna. You could definitely serve this meal with a side dish, but I feel like it already has everything in the lasagne. It’s got pasta, cheese, and veggies! So, I’m keeping it simple and serving this all on its own!
- Monday – 12/20/21
- Tonight we will be having hamburgers for dinner. I make these every other week. This is one of those that I don’t have a real recipe to share with you. I just make them very simply by making patties with ground beef. Sometimes I’ll throw a little bit of McCormick hamburger seasoning on them. For my one daughter that does not eat meat, I will be making some Impossible Burgers. I will also be making a can of pork and beans, and Oven Fresh Seasoned Potato Wedges.
- Tuesday – 12/21/21
- Every Tuesday, we do some type of Mexican theme meal. Tonight we will be making Sheet Pan Shrimp Fajitas! These are really simple to make and taste great!
- Wednesday – 12/22/21
- On Wednesdays we usually do seafood. Tonight we will be trying out a new shrimp recipe. I will be making Garlic Parmesan Baked Shrimp. For side dishes I will be cooking up some linguini with butter and a bag of some frozen vegetables.
- Thursday – 12/23/21
- Thursday’s we usually do some type of soup and grilled cheese, or breakfast for dinner. Tonight we will be having Instant Pot Broccoli Cheddar Soup. Then I will just cook up grilled cheese to go with it.
- Friday – 12/24/21
- Since tonight is Christmas Eve, I decided we will do something simple. I am going to purchase a bunch of appetizers that I can just pop in the oven so that I won’t have to spend time cooking. I do have a recipe to share that I will be making for breakfast which has become a tradition. For Christmas Eve morning breakfast each year I make Bacon and Egg Breakfast Tarts.
