MEAL PLAN WITH RECIPE LINKS – 05/04 – 05/10/24

Welcome to my weekly meal plan! Each week I like to share the meal plan that I will be using for my family for the upcoming week. I do this because I think that having a meal plan is really important for many reasons. Some of those reasons include saving money, wasting less food, and having less stress when it comes time to figure out “what’s for dinner?”! I try to stick with a meal plan that is simple to make things a little easier during our busy weeks. I hope this can help you with some ideas of what you might want to make this week.

• Saturday – 05/04/24
  • Tonight we will be having Creamy Italian Instant Pot Chicken Breast with Easy Rice Bake Casserole. You can see a video of this recipe on my YouTube channel here.
• Sunday – 05/05/24
  • Tonight we will be having Chicken, Sausage, Peppers, and Potatoes. This is nice because it all cooks in one roasting pan.

• Monday – 05/06/24
  • Tonight we will be having a simple Cobb Salad. I will be grilling up some chicken breast and serving with Romaine lettuce, bacon, avocado, and diced hard-boiled eggs.

• Tuesday – 05/07/24
  • Tonight is our Mexican theme meal night! We will be having Homemade Nachos with Ground Beef.

• Wednesday – 05/08/24
  • We usually rotate some type of seafood on Wednesdays. Tonight we will be having Creamy Tuscan Salmon Shrimp Pasta! If you would like to see my YouTube video of this recipe, click here!

• Thursday – 05/09/24
  • Thursday we usually do some type of soup and grilled cheese, or breakfast for dinner. This is the night that I go food shopping, so I try to keep things simple. Tonight we will be having breakfast for dinner. I will be making some Turkey Bacon in the Oven. Ever since I discovered making bacon in the oven, I don’t know if I will ever fry it again. It’s so much easier, and tastes great! I will also be making some scrambled eggs and home fries in the air fryer. For the home fries, I just dice up potatoes, peppers, and onions. Then, I toss them with some olive oil, salt, and pepper and just throw them in the air fryer. They could be roasted in the oven also!
• Friday – 05/10/24
  • Tonight we will be doing Rib Eye steak for dinner. I just marinate the steak with some McCormick Montreal Steak Seasoning, oil, and wine vinegar. Then throw it on the grill, or broil it to your desired doneness. As a side dish, I will be making some Cauliflower au Gratin.
